Crustless Quiche

This week has been very busy, but I didn't want to go too long without posting, so I figured another recipe would have to do. I adapted this from allrecipes.com.

Cheese and Onion Crustless Quiche

1 medium white onion, diced
2 cups shredded mozz. cheese
1 T all purpose flour
5 eggs
1/2 cup milk - 1% or higher
Italian seasoning - to taste (optional)
garlic salt and pepper - to taste
0live oil and cooking spray

Dice onion and saute in olive oil (and Italian seasoning, to taste) until clear. Once onions are cooked, spread evenly in the bottom of a generously greased quiche or pie dish. Toss 2 cups shredded cheese in 1T flour. Sprinkle evenly over the onions in the quiche dish. Using an electric mixer or a whisk, beat eggs, milk, garlic salt and pepper until evenly blended. Slowly pour egg mixture over the cheese and onion already in the dish. Bake, uncovered, at 400* for 10 minutes and then reduce temp. to 325* and continue baking another 30-35 minutes or until knife inserted in the center comes out clean. Serves 8
